Seems to me that actual commercial grade stuff is cheaper and probably better made.

Happy with our Kitchenaid gas cooktop. When we were going to build, I was all set to buy a 36" American Range with zero electronics. Great burners and a solid build.

That's a pretty nice looking unit, and not all that bad of a price either.
I may drop some coin on a range, but only because I want at least 36" size group and a griddle. Honestly don't think I can fit bigger in the kitchen I'm designing. Kitchen is the hardest part due to the location I want it and the style of the house which dictates a lot
I approve of a gas range of over 500 miles per tank

This is more reasonable at ~$2700.... not convection though. To step up to convection you're spending more like $7k for a commercial 48" or $5k for a 36" from Lowes.

I'd go with a hood. Honestly don't know if they require additional ventilation. Would be surprised if that were the case.
