Neighbor butchered a cow and I bought some of the meat. I got the brisket and put it on the smoker. Approx 8 hours, with just a little hickory. The taste is so different from store bought beef. These cows are free range grazing on grass all day, plus supplemented with some alfalfa and corn. The flavor is incredibly rich compared to the mass produced beef from the store.
