Maybe not the best literature ever but the novel I enjoyed reading most was The Stand by Stephen King. Its one of the only two books I've read multiple times.

I haven't read fiction in a long time, but some of my favorite authors:
Richard Adams
John Irving
Anne Rice before she found religion
Tom Clancy before he found ghost writers - his stuff is dated though
Stephen King has great imagination but I find his style too informal/guttural
Harper Lee - To Kill a Mockingbird
